I like Tofu! We used to have a free soup kitchen in Gureneville that fed the bearded outcasts of society with Tofu. It was totally delicious!

But I have to question: Rather than buying the Tofu Xpress, can't you just use a an old table vice out in the garage?

Or you could wrap it in a towel and I could run over it with my bike?

apart from all the fun deranged carnivores can have with this product, is this the sort of device one would use to make tofu firm enough for flaking?
we purchase a tofu salad which has the consistency of tuna, and it seems most tofu bricks are too squishy to parent this product.

Pressed tofu is firm and not particularly flaky. However, there are many many soy products with many different textures. Bean curd skin (which is skimmed off the top of the vat during the tofu making process) can be scrunched and chopped for a convincing fish-like texture. I've had "smoked fish" made with this, with a seaweed skin, that is startlingly fish-like.

thanks. it's an interesting texture issue; the tofu salad is very reminiscent of tuna (or chicken- or turkey-) salad. i don't mind buying it, but if i could make my own i'd try some things with it which aren't possible with the finished product i buy.
