I'd really like to have gone to Max's of Manila, I was right in the neighborhood two days ago!

BTW, thanks to those of you who recommended Descanso Gardens, that was very calming. And I definitely needed calming, will tell more later.

It's interesting, I'm a big fan of this style of dessert because they often use really good natural ingredients and they aren't too sweet. This is a little too day-glo for my tastes too. We associate these colors with cloying fake fruit tastes, but I suspect this dessert doesn't taste anything like that.

For example, the purple ice cream is not some horrible grape thing, it's purple yam and probably tastes something like sweet potato.

I'll find out next year!

I think I was kind of balking at the mishmash of textures... I see gelatin in there (yuck, hate the mouth feel), and ice cream of some kind, and beans, and is that cheese shavings? The red things look like maraschino cherries, and the white things look like pearl onions! I know they're not, but...

I'm not usually very finicky about food... I'd have to try it to see if I actually liked it.

1) the "gelatin" is probably actually an agar gel, which has a firm, brittle, crumbly texture. from the color, i'd guess it's flavored with pandan leaf.
2) as Tony stated, that's ube ice cream. sweet, but not malty/toasty like sweet potato.
3) yup, beans. in syrup. very asian.
4) yup, cheese shavings. i've had filipino corn & cheese ice cream before, it's really not so bad. kinda boring, actually.
5) yup, probably maraschinos.
6) the "pearl onions" look like candied toddy palm seeds to me. they have a texture that i can only describe as like a compressed banana. then again, they might also be large tapioca pearls or little dumplings of boiled mochi.

i also see some jackfruit, a piece of ube cake, and a chunk of flan. all served over shaved ice with coconut milk.

yeah, it's textural alright....

i love halo halo myself, but i'm also a texture freak and i love the chaotic mix of flavors and temperatures (some toppings are frozen, others chilled, some room temp). it's a high entropy snack.
