It turns out that Modernist Cuisine has some serious problems with accuracy. In just a brief skimming I have found big errors that are not in the errata list at all - a cup of cornstarch weighs 8 grams? Sigh.

I hate to say it, but it's a typical Microsoft product - you have to wait until service pack 3 to get something that works. :-P

According to this website, cornstarch density is 135.26 g per metric cup or 4.52 oz (128 g) per US cup. Sounds like your book is off by a factor of 16, or perhaps it's a typo where the "12" was left off the "8".

I have yet to run into them here. I measure everything in terms of grams or occasionally in ml if it's liquid.

I tend to measure my daily masses/volumes in milligrams and microliters.
(But, then again, I work in a molecular biology lab :-)
